Date Night Movie Review ~ The Great Gatsby


Well after a week off due to work, date night is back (and sorely missed).  I was not even feeling very good and we still went out for some us time.

This week was my week to choose and I picked The Great Gatsby.  I was very excited when I first saw the previews for this movie.  Mainly b/c I have been in love with Baz Luhrmann since I saw Moulin Rouge long ago.  His style is so amazing to me.  It is almost like watching a broadway stage show on the big screen.  I also enjoy Leonardo DiCaprio and Toby Maguire.

This movie definitely did not disappoint!!  It was visually spectacular.  In true Baz Luhrman style, it incorporated a lot of modern music but made it "work" in the 20's setting of the movie.  It has been a long time since I have read "The Great Gatsby", but from what I can remember this move stuck pretty close to the book.  It was very dramatic in spots and had the entire audience laughing out loud in other spots.  It had all of the twists and turns of the original story.  The acting performances by EVERYONE were spot on!

I whole-heartedly suggest seeing this one on the big screen.  I guess it is being offered in 3D as well but I'm not sure we really missed anything by not seeing it (I'm not the biggest fan of 3D if you cannot tell).

My husband never had to read this in school and he thoroughly enjoyed it as well.  What did you think?

Creamy Cauliflower Mashed "Potatoes"




This is one of my favorite low carb sides.  It is not new but I love this swap for mashed potatoes.  I could honestly have them for the rest of my life and never miss the potatoes. (and I am not a huge fan of raw cauliflower by itself). 

Mashed cauliflower with a pre-made rotisserie chicken for dinner is a super simple and fast dinner for my family. (so no... I did not make that beautiful looking chicken pictured above, but my hubby did cut it up.....but the mashed cauli is all mine)

You need:
1 head cauliflower - chopped
1 T of minced garlic (I buy already chopped in olive oil)
3 oz. cream cheese
1 T parmesan cheese
salt and pepper to taste
a couple sprigs of parsley



Cut up the cauliflower

Boil in water for about 10 minutes or until fork tender

I like to add all of the cheese and garlic to the bottom of the food processor so the hot cauliflower will melt it.

I use a slated spoon to pull out the boiled cauliflower into a bowl lined with a paper towel to absorb the water.  You want to absorb as much water as possible.

Blend together the cheeses, garlic, and cauliflower.  At the end throw in the salt, pepper, and parsley.




Kid tested and a big win!! Also Mommy approved for being yummy and MM neutral!

A Little Dose of Happiness ~ Special Smile Moments this week!

So, I was out of town most of this past week but still found some great happy moments!!
 
 
 
Will trying to eat an ice cream cone for the first time.  He kind of just drank it out of the cone (there was not much ice cream in there b/c Tyce had most of it in a cup).

 
I got a whole row of seats to myself on the plane!!!  I love it when that happens and I can stretch out and enjoy myself.  I am definitely happier than this picture makes me look!!


My super nice hotel room for the week!!  It was like a little suite with a mini kitchen.  I guess they figure if you are going to spend a week away from home you might as well be comfortable.  Makes eating well much easier too!

 
The special quote I got in my Dove chocolate one night.  It was actually the day when I had lost my luggage and was waiting to get it back.  I said "ok Dove chocolate....I WILL enjoy this moment" and I got some of my electronic scrapbook completed (so what if it is the scrapbook from my 18 month old's first year - better late than never)

Purposeful Living ~ Choosing to Focus on Happiness

I have been really trying to focus on happy and positive things in my life lately.  It is no easy task but it makes a world of difference.  And like I mentioned in this post, focusing on the positive makes you see the positive in lots of little things in everyday life.  It really brings about true joy without thinking.

The topic I wanted to discuss today is having joy in the midst of stressful or frustrating life circumstances.  This is not always as easy as just finding happiness in everyday-not-as-stressful-life. But living a very stressful and negative life is soooooo detrimental to someone's health and I have experienced this first hand.   I know when I am sad or frustrated I just want to stay that way and bring everyone down with me.  But I have realized that it does not do anyone any good.  Also, I know my kids and husband feel it when I am unhappy and I don't want that for them.

So I have decided to be purposeful in my journey for joy.  I made a goal that if I am experiencing a stressful or frustrating circumstance when I would normally lose my cool, then I am going to pause and make myself focus on 3 positive things about the situation.  I am hoping that this will shift my focus to the positive and put me in a better mental state.

Interestingly enough, after I made this decision (on the plane this last weekend) I encountered just the situation to test myself.  I was on a business trip this week where I had to look very nice every day and packed every business outfit I owned.  I made sure to bring my make-up (which I don't wear often) and my nice shoes.  After waiting through 2 rounds of baggage claim I realized they had lost both of my bags and I was most likely going to have to buy a nice outfit for the next day (money not budgeted for). 



So I asked myself what my 3 positives were...

1.  I arrived safely to my destination from both planes.
2.  I was able to relax and read on the flight where I had a whole row of seats to myself
3.  If I had to buy a new outfit then it would be fun to shop for something new since I have been losing weight.

Then I thought of some more.....
4.  I still had my laptop and all of the preparation files I needed for the week
5.  I was going to have the afternoon to relax and get some much needed alone time

It really did the trick, I was focusing on happy experiences and I was pretty calm with the whole situation.  Because I had approached the situation with happiness I was very nice to the lady working in the lost luggage counter (normally I probably would have been very short and frustrated) which hopefully made her job easier.  When all was said and done I just had a nice laugh about it.  I did end up buying some new outfits that night but at the last minute they delivered my bags to the hotel at 1 am and I was able to wear my own clothes and return the ones I had bought.

Ultimately, I have discovered that you can't wait for circumstances to go your way to be happy (I'll be happy when ......)  You have to make it a choice everyday.

Breakfast for Dinner ~ Low Carb Coconut Flour Pancakes (gluten free, grain free)



Breakfast for breakfast is fine, but why not switch it up and have breakfast for dinner every once in a while?  My family does this alot because it is simple, on the cheaper side, and the kids think it is so fun!

One of the challenges with eating low carb is when you miss things like pancakes.  When I first was searching for low carb recipes I found this one, which I love.  It makes thin little pancakes that kind of taste like French toast.  Simple and tasty.

Now, I know I have said before that I am not creative in the kitchen, but after making a good amount of low carb and paleo baking recipes I thought I could try my hand at some alterations.  I love the pancakes I mentioned, but they are very thin and I wanted to try to add some fluffiness.  I have not been a fan of the pancakes made with almond flour b/c they are too dry and gritty for my liking but then I was introduced to coconut flour and it changed my world.

So here is my altered recipe that is pictured above:

Coconut Flour Pancakes
2 eggs
2 oz. cream cheese
5 drops vanilla stevia (or 1 packet splenda or other sweetner)
1/2 teaspoon cinnamon
1/4 c coconut flour
1/4 c water
1 Tablespoon nut butter - I used my pecan butter but almond would work (peanut butter probably too but it might taste like it a little)
Mix-ins optional - I sometimes add mini chocolate chips for the kiddos or fruit for a MM step 2 option or chopped up nuts

I mix the batter in a magic bullet or any small blender to make sure it is good and combined.  If you want a thinner batter just add more water until you get the desired consistency.  I pour about 1/4 cup per pancake on a griddle for about 2 minutes on each side (you really can't over cook them but thy can be under cooked in the middle so be sure to do what works for your heat level).

You can see that they are pretty fluffy and moist on the inside :)



I may try and substitute the cream cheese/water for some coconut milk next time to make it paleo friendly.......but the hubby does not really dig panckes anyway so my efforts may be wasted.

I added blueberries to half the batch which was amazing!!  I asked Tyce if he liked the chocolate chips or the blueberries better and he said blueberries!!  That's my boy! And these were fresh blueberries so no fake stuff you find in the eggo waffles and such!




If you use 1/4 c blueberries or less this can be your 5 g counter for those on MM.

A Little Dose of Happiness ~ Special Smile Moments this Week!

First, I just want to say that this part of my blog has been great for me.  Focusing on the positive things is very relaxing and therapeutic.  Because I write this post every week I am always looking for the little things that make me happy.  At first I just thought it would be the weekly post where I could mention the fun things with my life and family, but it helps me to notice those little wonderful things constantly...I recommend it!!  So this week's focus...


 Celebrating Cinco de Mayo with the family and the whitest Mexican kid you will ever meet (my youngest son - and yes he is actually Mexican).


A local organic and whole food type market that is only 5 minutes away from our house.  We had no ide that there was a specialty store so close to us that sold all kinds of organic veggies/fruits and all of the special ingredients we use alot!!  This helps us supplement the farmers market trips.



My last class of the spring semester was this week so I am done teaching for the summer!!  I had a great group of students this semester that put in a lot of hard work so that was great!


My "Run Mom Run" 5K from Saturday.  It was a beautiful day and the run was very hilly but through a beautiful neighborhood and park combo.  My husband was actually not running for once and him and the boys were cheering me on :)


The view from my airplane.  It is so amazing to be flying through the air.  It was a good flight even though they lost both my bags of luggage (more on that to come later in the week).

Happy Mother's Day !!


Happy Mother's Day to all of the moms out there!  I celebrated my mother's day yesterday because I actually had to go out of town today for work.  Chris and the boys got up at 6 am to see me off on my plane.  We had a great day yesterday and bless my husband who waited on me yesterday and also has the boys all week by himself.  I couldn't do it without him.

Sometimes I wonder if when we become mothers ourselves we forget our own mother.  Maybe I take my mom for granted because she is always there for me.  But what I do know is that since becoming a mom myself I have so much respect for everything we put my own mom through.  I only have 2 kids and she had 4!!  I know how patient she was with us and how much she taught us.  My mom is a very strong, independent, intelligent, and caring woman!  So thank you mom for all that you did and still do for us.  I am a better mom because I had a great mom to learn from.


I have also learned so much by being a mom.  I have learned (and still learn) patience.  I have learned to see things through the eyes of a child b/c they are so pure and loving.  I have learned that all you really need to survive in this world is love.  Kids prove that every day.

I am sitting in my hotel room, sad to be away from my family on this mother's day, but full of love for my 2 baby boys.  Tyce would be really mad at me right now for calling him a baby.  He would say "I am a big boy mama, I am growing".  Sending my love to them right now as they sleep with this song that I love so much.  Sweet dreams my two little men, I am proud to be your mommy :)

Date Night Movie Review ~ Iron Man 3

It's date night again!  So, we were definitely waiting for this one to come out!  The hubby and I love all of the Marvel movies.  Even after seeing this one, nothing is going to beat out The Avengers for me but this was a close second.

The movie was action packed and very funny at the same time.  No one could replace Robert Downey Jr. in the Iron Man role.  It is just made for him.  He is so rude sometimes (his character) but you just eat it up and beg for more.  Interestingly enough, that is the exact way my husband is, so maybe I am just attracted to it (just kidding, kinda, love you honey).

I don't have anything else crazy witty to say. I loved the movie.  Robert Downey Jr. was great.  Ben Kingsley was a pleasant surprise in his character as well.

As always with the Marvel movies, if you wait until after the credits are over there is a short teaser at the end.  I enjoyed it and thought it was funny and worth staying.  But I did hear alot of people saying "you made me stay for that?".  So take it or leave it, but we decided if there was any extra on-screen action (no matter how trivial) we wanted to see it!

Definitely go see it in the theatre.  We did not see it in 3D and I don't feel like we missed out on anything...

Attacking the Clutter ~ Life draining e-mail subscriptions



Does your e-mail inbox look like this?  This is an actual picture of mine.  Every day I open it with about 100 unread messages all from different stores, newsletters, etc.  Well, if you have been reading my blog then you know I am attempting to "attack the clutter" in my life step by step.  So, next phase, massive e-mail abolishment.

This picture above is actually my e-mail account that I ditched as my default b/c I am always searching through a billion e-mails to get to one that I actually NEED to read.  I check it almost every day, but mainly to delete e-mails.  The excuse I gave myself as to why I keep it so cluttered is because one day I will NEED to know that some store is having the exact sale or coupon I need.

Then I realized:
1.  I waste a lot of time sifting through and deleting e-mails that I mostly don't even read
2.  These stores are hoping that I see their e-mail and buy something that I don't need and don't have the money for
3.  If I really need a particular item I can search the ads until I find it for the price I need (patience, right?)  Or I can buy a discounted gift card to the particular store prior to buying the item (more on that in another post).

The bottom line is:  I don't NEED all of these e-mails.  They are eating up my precious free time.  So I have begun a process of attacking the clutter of my e-mail inbox to lead a simpler life :)  It is a slow process of unsubscribing to every unnecessary e-mail I get when I see a new one I have not attacked.  It has been great and now I can focus on more important e-mails that come through.

I have left subscriptions to 2 of my favorite blogs that give me a list of ongoing coupons and great sales so I don't feel like I am missing out.  They do all of the work for me and don't clutter up my e-mail (2 e-mails as opposed to 65 - right?).  These blogs are:

Kansas City Mamas - great for anyone local here in KC that wants store ads, etc.
The Frugal Girls - more of a nationwide discount, coupon blog

Both of these blogs help keep my life simple and my budget on track.  I promise I will post soon about budgeting and financial peace :)  So far this e-mail attack has been so liberating and I have been able to revive my old e-mail account again.

How to Make a Frozen Buttercream Icing Transfer ~ Cow Baby Shower Cake

This is a picture of the cake that I had mentioned before that  I made for my sister's baby shower this weekend.  I used a technique for the picture of the cow that I learned last year called a frozen buttercream icing transfer.  It is really easy especially for someone artistically challenged like myself.  Here are a few other ones I have done (the Yoda one was while I was teaching my sister-in-law how to do it and she did most of it - great job Sarah!) - This is in no way any kind of health friendly but it is a special occasion cake for pete's sake :)

So here is a guide on how to do this yourself with a few tips along the way.  To start just find any image that you want to put on your cake.  Some suggestions are coloring book pages or simple images.  The less intricate details the easier it will be, but you can pick whatever picture you want.  After you choose your image you want to print it or copy it in a mirror image of what you actually want it to look like on the cake (it will be backwards as you are working on it).


The image on the left is the original image that I drew some extra details on.  The image on the right is the mirror image (cleaned up a bit).  Make sure your image is going to fit onto the actual size of cake you are using)

 You will need a cookie sheet (or some other hard flat surface that is portable enough to transfer to the freezer), some kind of decorating bags, icing tips, wax paper, tape, black decorating icing, food coloring, and your mirror image.


 
I use Wilton tips and food coloring.  They tend to work the best for me.  Liquid food coloring seems to look a little marble-y. (By the way I have no financial interest in Wilton, they just make good products).

 For the outlining I recommend using the pre-made black decorating icing.  If you try to make your own black icing it will take a lot of coloring and probably won't taste good. 

 Tape the image to the cookie sheet making sure it is completely flat and secure.  You don't want it to move on you.

 Cut the wax paper to a size that completely covers the image and tape it to the cookie sheet.  Again, you do not want this to move on you after you start.

 Take the black icing with a small circle icing tip (I used a #2 tip here).  Start outlining the entire image in the black. What you are going to see is on the back side (touching the wax paper) so the little raises in the icing when you move is just fine, you won't be able to see it in the end.

 All of the outlining done.

 If you happen to have any black in the image that needs to be filled in, then go ahead and do that after you are done outlining.  Then stick the cookie sheet w/ image in the freezer for at least 15 minutes.


 While your image is freezing you can make all of the other colors of icing you need for your picture.  I use Wilton's buttercream recipe.  No matter what icing recipe you make just be sure that it is at least 1/2 butter (not all shortening or it will not freeze correctly).

 Next, pull your outlined image out of the freezer and fill in between the outlined area with the correct color for your image. The black will be frozen and hard at this point.  Make sure to touch the color to the outline so there are no gaps.  Since you only will see what is on the part touching the cookie sheet then it doesn't matter if you go over the back of the black icing with the color icing.

 After all the color has been added to the cow.  As you can see, I have covered up some of the black outlines.

 After the whole image is colored in, then you can put the cookie sheet back into the freezer for at least another 15 minutes (more is fine).  While in the freezer, you want to make the icing for the last step.  Whatever color you will ice the cake with is what you want to use for the backing.  This way the image will look like it blends into the cake.  I was using baby blue.

 With the cake color you want to outline the entire image and you should just barely go to the outside of the original black outlining.

 Then fill in the entire back side of the image with the cake color.  You can spread this flat so it will sit level when you put it on the cake.  Your whole icing transfer should be approximately 1/4-1/2 inch thick.  Stick the cookie sheet back in the freezer for a minimum of 45 minutes.  I usually do this the night before and leave it in the freezer overnight.

 After the image is completely frozen, remove the tape from the cookie sheet with the wax paper still attached.  Flip the icing transfer over and place in the desired location on the cake.  Slowly peel off the wax paper to see your image.

 As the image thaws it will be just like normal icing.  You can cut right through it to serve the cake.  If you are worried about the icing melting (summer) then just stick the whole cake in the fridge until you are ready. But it should be fine at room temp.

Now you are done.  Just add any writing or other decorations you want!!  Now you can make any image you need when you get difficult requests (like when my son wanted a Diego cake WITH baby jaguar) :)
